Newsletter Club: Ophelia's Burns Night Supper

You may recall from last week's newsletter, that our new Newsletter Club members have been considering interesting content for future editions, and were keen to share some of their favourite recipes with you.
This week, Ophelia PB (7S) shares her favourite recipes for a scrumptious Burns Night Supper, including Cullen Skink, Haggis, Neeps and Tatties! For dessert, Ophelia suggests making Cranachan and Scottish Shortbread, both of which you can see her making in the photographs below. Ophelia used her Scottish great-grandmother's recipe for the shortbread - and it looks delicious! Being mindful that some of our readers may be vegan or committing to Veganuary, here is a vegan shortbread alternative that Ophelia recommends.

Burns Night is on the 25th January every year. This year it is on a Thursday. On this day we celebrate the poet Robert Burns. To open the ceremony it is common for someone to recite Robert Burn’s poem Address to the Haggis. A Haggis will hold an important place on the dinner menu.
Burns Night was a holiday that people in Scotland wanted to make everyone able to join in with and so the ingredients were local in Scotland. It is supposed to be a night of dining and poetry.
Fun Fact - Even though Robert Burns died young at aged 37, he wrote over 550 poems and songs in his lifetime
